For the first time ever, I just finished making Esrog Jam....its yum! Of course I won´t be able to make shehechiyanu on Tu bishvat because I´ve already tasted it! But I am very pleased with my accomplishment:)
If you want some, you´ll have to come for a visit to Brazil.......

Recipe: (not an exact science, mainly from someone who told me how to do it , looking at different recipes on the internet and the fact that Levi said his grandmother put in apples)
4 esrogim
Soak for a week in water changing water each day.
Cut into quarters and take out pits. slice very very thinly.
Boil in water for a few minutes and discard that water.
Add new water, 3 sliced apples (which dissolve afterwards) and quite a lot of sugar.
I don´t know how much, I just kept tasting and adding.
Cook for about 2 1/2 hours. The water boils down and becomes syrupy, jammy (think pesach sugar water). I added sugar towards the end too bc I decided it wasn´t sweet enough.
Sadly, we won't be traveling to either country to taste what sounds like an exotic treat. I'll have to wait until next year to experiment, as our lovely esrogim have long been discarded...oops!
hey chana Bubby Friedman once made me esrog jam. it actually sat in my fridge and sadly i never got to taste it. I sure yours was yum
